Cilantro Lime Hummus
Hummus is one of my favorite summertime dips, and its healthy as well! This recipe uses two of my favorite ingredients, Cilantro and Lime, which helps create a complementary flavour to traditional chickpea hummus. Give this a try and let me know if you enjoy this recipe as much as I do!
Vegan Cilantro Lime Hummus
1 can chickpeas (or use equivalent fresh cooked chickpeas)
Juice of 1 lime (or more to taste)
¼ cup tahini
2 small cloves of garlic
pinch of sea salt (to taste)
3 Tblsp Olive oil
¼ tsp ground cumin
½ tsp red pepper flakes (optional)
¼ cup cilantro
Blend on high speed until smooth and creamy!
I've used both canned and fresh chickpeas to make hummus. My preference is always fresh, the flavour is much better! If you are using fresh you may need a little more salt compared to canned. I generally soak the chickpeas overnight and then use a pressure cooker to cook them.
