Happy Mother's Day Weekend to everyone...what a great time to do some baking!

As many of you may know, my inspiration for taking up baking was my mother. Some of my earliest memories were sitting on the kitchen counter helping my mom create a mouthwatering dish. I really admire my mother's baking, because not only was she great at following a recipe, but she had a real knack with creation. My mom is of East Indian decent, and although Indian cooking was common in her childhood, baking was not. This is because in India breads are traditionally created with a tandoori oven and sweets were made on the stove, which is quite different than the conventional ovens we're used to in the western world.

So when my mom and dad moved to Canada, she had to learn on the fly. My mom was always experimenting with Indian flavours and common western baking. Many of the flavours I grew up with were showcased on The Great Canadian Baking Show. Happy Mother's Day mom! Thanks for being my inspiration!

There is one fact I know for sure...mothers LOVE chocolate, and brownies are an easy, tasty way to satisfy that craving! This is one of my favourite chocolate recipes.

It's a quick, one pan batter that doesn't take long to make (and doesn't take long to eat either ;)

Ingredients:

1 cup butter

1 cup water

1/3 cup cocoa powder 

2 cups All purpose flour

2 cups sugar

1 tsp baking soda

1/2 tsp salt

2 eggs

1/2 cup sour cream

1/2 cup chocolate chips

1/4 cups walnuts

Method:

1. Heat oven to 375 degrees F. 

2. In a sauce pan, heat the butter, water, cocoa to a boil (stir occasionally).  Remove from the heat and keep aside. 

3.  Add flour, sugar, baking soda, salt, eggs, and sour cream and beat until smooth

4.  The batter will be quite thin, pour the batter into a greased/parchment lined pan. Top with chocolate chips and walnuts.

5. Bake for 20-25 min.
